Huatiada is a traditional potato dish to the southern region of Peru and involves baking the potatoes in an earth oven that is collapsed on the inside to effectively bury the potatoes. Cooking took around 90 minutes and once cooked the potatoes were weighed before being served to the public. The skin cannot be eaten (as it is covered in soot and earth) but the potatoes are peeled and eaten by hand. This dish is often accompanied by cheese. 1,984 kilos of raw potatoes were used in this attempt.
