Celebrity chef Junior Merino and his wife Heidi are driven by a passionate mission to “elevate” Mexican cuisine. Since opening their restaurant in 2018, they’ve earned dozens of awards and praise for their food and bar menu that is elegant, delicious, and made with pure ingredients from scratch daily.
Junior is a titan in the mixology world, having consulted, designed, and implemented cocktail menus for global restaurant, resort, hotel, cruise ship, and airline chains. He’s invented recognizable products like Starbucks’ Refresher drink, different kinds of Campbell’s soup, and even implemented the first draft cocktail system while working with Epcot at Disney World.
He also was an official ambassador for the Mexican government and traveled all over the world promoting Mexico’s agave spirits like tequila and mezcal. It’s more than safe to say he’s an expert and connoisseur in this type of alcohol.
He has always had hundreds if not thousands of kinds of agave spirits on deck at his restaurant. His spirit collection extends to whiskeys, bourbons, and wines; and has some of the most rare and expensive bottles anywhere.
He knew he could beat the agave spirit record - but he thought that GWR would find out about it on our own and come knocking to award the title. When he learned that wasn’t necessarily the case, he applied to set the record title straight.
