The record-breaking restaurant, Serendipty3 in Manhattan, New York, (USA) has cooked up the ultimate “Crème de la Crème Pomme Frites”.  

Their latest menu addition, which features luxurious ingredients and finely crisped potatoes, has set the bar for the classic American dish, as it has now earned the title for the world’s most expensive French fries (chips).

Valued at $200 USD, Creative Chef, Joe Calderone, and Corporate Executive Chef, Fredrick Schoen-Kiewert, whipped up the new food item to provide guests with a unique and delicious French fry experience.  

Bringing together incredible flavors, Chef Joe and Fredick’s recipe includes: Upstate Chipperbeck potatoes, Dom Perignon Champagne, J. LeBlanc French Champagne Ardenne Vinegar, batches of pure cage-free goose fat from France, Guerande Truffle Salt, truffle oil, Crete Senesi Pecorino Tartufello cheese, shaved black summer truffles from Italy, truffle butter, organic A2 A2 100% grass fed cream from Jersey Cows, Gruyere Truffled Swiss Raclette that has been aged for 3 months, and of course, 23k edible gold dust.

The dish is served up on a Baccarat crystal Arabesque Plate, with a matching bowl to carry the Mornay Sauce for dipping the golden fries into.

To make the fries, the potatoes are first blanched in Dom Perignon Champagne and J. LeBlanc French Champagne Ardenne Vinegar to give the initial bite a touch of sweet decadence and acid.  

They are then thrice cooked in pure goose fat from Southwest France, to give the outer shell a crisp, crunchy texture.  

On the other side of the kitchen, the velvety Mornay sauce which accompanies the French fries, is first made by melting copious amounts of truffle butter in a pan.

Chef Fredrick then adds a pinch of flour to make a roux, and slowly whisks in the organic A2 100% grass-fed cream from Jersey Cows to thicken the sauce.

Lastly, cubes of Gruyere Truffled Swiss Raclette are folded into the mixture, adding a thick creaminess that quite closely resembles a fondue.

The platter is delicately prepared by both chefs, who add garnishes of shaved truffle, Crete Senesi Pecorino Tartufello cheese, and 23k edible gold dust.

Once combined, the result is a luxurious display of cheesy and fried goodness, ready for consumption.

As part of the Guinness World Records guidelines, the dish must be available for purchase to the public, and an unbiased customer is required to buy it, to qualify for the title.  

A customer recently purchased the record-breaking plate of fries, the first of Serendipity3’s guests to enjoy the new recipe.

This record achievement is certainly a happy celebration for Chef Joe, Chef Fredrick, and the staff of Serendipity3, as they just re-opened their restaurant last week. It was closed off to the public since the start of the pandemic in 2020.
